Half Way Through...

Well, our pantry challenge is going well. I'm not sure if Kylee would agree. She has missed a lot of dessert due to plates full of food that she has turned her nose to. We are talking kid type food, not brussel sprouts or lima beans, nonetheless she has a very picky palette. This may be how our freezers got so full. Our menu had gotten quite limited. At a glance it hardly seems we've made a dent in the rations, but at month's end I am hoping to fit everything in a small freezer, so we can defrost and discard those items that just aren't going to ever make the cut. I have had to completely block it out of my mind that wildly awesome sales are flying by me... I even recycled a $10 Safeway coupon (torture).

Tonight Kyndra is sick and I told her I thought I may need to go buy her some medicine. She got really worried that we wouldn't "win" the challenge if I went to the store. I assured her medicine didn't count.

Really In It...

Okay I really was serious about the pantry challenge, but when I talked to Tony about it he was totally into it. He has been saying forever that we need to eat up the food from our freezer. He will leave no room for fudging I'm afraid (I mean thrilled to be held accountable :(). He thinks this is going to be great for Kylee to learn to eat and be thankful for the food she is provided rather than starting to chant about wanting yogurt or cheese sticks at the onset of every meal.

I am pretty nervous about this now, but a challenge is good... right???

Last night we had Chicken Dijon, brocoli and rice. Today's breakfast was cinnamon rolls and strawberry milk. The lunch menu is weiner wraps. Not bad so far, but stay tuned for the weeks to come.

Eat From Your Pantry Challenge...

One of my favorite money saving websites put out an eat from your pantry challenge for the month of January. That coupled with the fact that we got our January paycheck before Christmas (you can only assume the implications of that) perked my attention. I quickly decided I was in. The challenge allows for purchase of milk, eggs and produce. I have $100 cash in my wallet for the purchase of those items and for the amenities for Kyndra's birthday dinner. Shopping for anything else is a no no, as is eating out. We do get one trip to McDonalds thanks to Santa and I do get to grab Starbucks two more times, also thanks to the jolly guy in the red suit.


My biggest worry is Kylee, who eats only yogurt, string cheese and chicken noodle soup. I'm not sure what life will be like when she runs out of those things and I am not quite sure what we will put in her lunches on days when she goes to pre-school. I guess we will cross those bridges when we get there.


The challenge suggested taking photos of your food sources at the beginning of the challenge. So here they are... actually quite ridiculous.
